Mushroom gills – light brown to light gray (brown gills are acceptable)

Cap size below 45 mm, tolerance 10% up to 50 mm

Slice thickness: 6 mm +/- 1mm

Physical/chemical properties of finished product:

- salt content: 0,80-1,20 %

- pH level: 4,8-5,8

- SO2 : < 10 ppm

Stem length: up to 25 mm tolerance 0% above 40 mm
